Young Green Coconut Kefir

We recommend starting with a fermented beverage to quickly inoculate the child’s gut with substantial amounts of beneficial yeast and bacteria. This is done using a wonderful food called Young Coconut Kefir (YCK). YCK is made by draining the juice of the young coconut (not to be confused with coconut milk, which comes from a mature coconut and is nutritionally very different) and fermenting it with kefir starter for 18-24 hours.  The fermentation process eats up the natural sugars in the juice, makes the minerals in the juice much more bio-available, and leaves a delicious, refreshing probiotic drink that is teeming with potent, protective microorganisms. The kefir starter, in addition to containing many beneficial bacteria, also has probiotic yeast, which are very effective at crowding out the detrimental yeast. The minerals, essential for the healing process help alkalinize the blood so that yeast, bacteria and viruses can’t grow. The other benefit of the YCK is that it quells sugar and starch cravings- very important when you are eliminating foods which feed yeast. YCK is abundant with Vitamin C, B vitamins, sulphurated phosphorous, calcium and magnesium  The water from the young green coconut closely replicates are own blood.  It was used as blood plasm in the Viet Nam war. The coconuts can be a great substitute for pasteurized milk; which many children can’t digest properly and we see reflux and eczema resulting; most likely. Just add a hour of sunshine for vitamin D and this is a perfect replacement for milk.


The coconuts are readily available in most areas of the US. As an alternative you can find a packaged young green coconut water in most grocery strains which can also be fermented. Make sure you are getting the young "thai" "green" coconuts. They shave the coconuts down and what is packaged is a white husk.

We also make our own juice the kid’s like to call “jungle juice”. We use a combination of sour concentrated juices like cranberry, pomegrant, and black currant, with filtered water, and stevia. Stevia is a natural sweetener from a herb; it’s sugar free, the Japananese have been using it safely for thousands of years and the kids like it.  Coke has recently announced they will start using Stevia in their diet products overseas. Presently, the FDA only approves stevia for use in supplements. We recommend freshly squeezed juices; world’s apart from a Capri sun. enzymes….

A gluten free diet is basic. Parents often do a gluten free casien free diet. The child’s grain sare mostly shifted to corn and rice and often corn will become an offensive problem. Grains that are seed like and gluten free.  It is always important to focus on good saturated fats.

 Infections start to be conquered and intestinal healing begins. And, very importantly, digestion of other foods happens as it should. For example, the raw, unrefined fats that are needed for the growth and maintenance of a healthy brain can now be assimilated.  

The other cultured food routinely eaten in the BED is cultured vegetables- a food found in virtually every society for the past several thousand years….except ours. Americans, with their fear of germs, have omitted or pasteurized every fermented food, removing a huge continuous source of probiotics to repopulate the gut.  It tastes a little like sourkraut; kids love beet mixtures and carrots and ginger. Some  milk kefir, buttermilk.


We recommend cod liver or krill oil for all children.


Magic food” is green juice.  This is an easily digested and assimilated source of vitamins and minerals, and is also highly alkalinizing to the body.  Green juice is made from vegetables run through a juicer, thereby separating the nutritious part from the fibers and other indigestible parts of the plant.  Favorites are brocoli stems, a leafy green, and celery.  The vitamins and minerals of the juice are easily digested and absorbed, even by a wounded intestine. Powdered green juice preparations are also available for use when a juicer is not available; we recommend a fat like avocado or raw cream be added to help slow down the assimilation of the juice


Right in line with their reverence for Nature, the foods are “real foods”…foods in their original form…before man alters them. We encourage large amounts of fresh land and ocean vegetables, four whole high-protein, seed-like grains (which are gluten-free and which do not feed the bad yeast like amaranth, quinoa, buckwheat and millet), clean animal proteins preferablly from grass and bug fed animals, eggs that are free-range free of anything man made, raw, undenatured fats, and mineral-rich Celtic sea salt and herbs for seasoning.


By reestablishing the Inner Ecosystem, healing the “wounded” gut, and by feeding the body “real”, undenatured, medicinal and fermented foods, the body is then able to muster up enough energy to the point where it can begin to detoxify.  As detoxification pathways open, and the gut heals, essential nutrients can get through the mucosal lining to feed the brain, thyroid and adrenals. Well nourished, they then begin detoxifying and healing.


We encourage transitioning into the diet; like using home juiced jfruit uices, using rice and corn products.  Just start making better choices.
