One of the issues we see is that everyone is confused about dairy. Understandably so. Children improved a lot when dairy (as we know it today) and gluten are removed from the diet. (This is true for every adult as well.)  So, I want to arm you with some dairy information.

Dairy is really a matter of quality, timing and following the food combining rules.

First of all, the dairy we eat in this country is poison. Literally.  It has been heated. We call it pasteurized. The casein that was created by God and has the ability to be a food for humans is totally altered into another substance. It is no longer in its natural state.  The casein in RAW milk or undenatured milk is in no way like the heated, twisted protein that is left when milk is heated.  Raw casein is a protein that the digestive system recognizes and processes, the heated casein is like "rubber." and is not fit to eat.

Also, very critical to understand is that all enzymes are destroyed. This means the proteases in milk are no longer there to digest the protein (casein). The lactase enzyme is destroyed and can no longer digest the milk sugar or lactose. The galactase is gone so you have destroyed the ability to digest another milk sugar called galatose.

In short with the casein modified and the enzymes destroyed you cannot even compare pasteurized milk with undenatured raw milk.

Then there is another important issue. Fat. The fat enzymes are destroyed so you cannot digest the fat in the milk. Children really flourish on full fat milk and cream and butter IF they are raw and undenatured. 

Also the milk in stores is homogenized. The milk globules are no longer round and in their correct size and shape. They are made tiny by the homogenization and are forced to remain throughout the milk. Real milk from grass fed cows has a pretty good-sized layer of fat (cream) at the top of the bottle. You can shake the bottle and blend the fat into the milk, but you can also take a turkey baster and suck off that wonderful cream and make butter, buttermilk and sour cream from it. Body Ecology has cultures that we use when making cultured veggies but this same microflora (plantarum) can also be put into this raw cream to make delicious fermented sour cream. I would like to see the children enjoying plenty of this raw cream as well. 

Please note that raw, undenatured milk is full of beneficial bacteria. I know we all have been brainwashed to believe that raw milk is dangerous and loaded with pathogenic bacteria, but that is simply just not true. In a healthy, grass fed cow the good bacteria absolutely predominates so that even if the milk is exposed to a bad bacteria it will be quickly consumed by the billions of good bacteria. This is "God's Way" or "Nature's Way." As long as goodness predominates in this world, the bad cannot even gain a foothold.

An example of this can be seen in a happy family. When the mother is loving and carefully sees that her children's are met and the father is there to also nourish, protect and provide loving strictness, the family is naturally happy. Lets say a grumpy, negative relative or guest comes to stay in this happy home. This person is a troublemaker and complains, gossips, tells the parents that the children are rude, even tries to come between the mom and dad. Even so, if each person in that family is basically a happy, stable family, they will just look at this person for what they are, a troublemaker and move away from that person or even ask them to leave. Unlike the bacteria, it is unlikely that anyone would chose to eat up that pathogenic toxic being, but they certainly cannot have much effect with so much happiness present. Happiness predominates.

This is true in Nature and it is the secret to health. Keep your physical body full of the positive (plenty of sleep, fresh air, exercise, downtime, laughter, nourishing food, love from family and friends, plenty of healthy bacteria in the gut, etc) and keep out the negative (stress, worrisome thoughts, toxic, negative relationships, chemicals, metals, parasites) and your body stays healthy. It will naturally and consistently push out toxins, but it will be "cleansing" to remain healthy.

So the first thing to understand about milk is that it is rare in this country today to have raw milk and raw milk products like butter and buttermilk. When you hear that milk is a bad food and children improve when you take milk products out of their diet, this is correct. Of course, anyone improves when you remove a poisonous food. When a child eats a pasteurized, homogenized dairy food, he/she is eating a poison.

On the BEDROK program your child now has access to a certain raw dairy foods that we are using as a medicine. We will use them to heal by using the right quality at the right time.

As you know from reading The Body Ecology Diet, we have seven principles or guidelines to follow that lead us to great health. One principle is Step By Step. This principle cannot be violated. There is a step-by-step order to healing. There is also a step-by-step order to follow when adding dairy into a child's body.

Step l
Heal the leaky gut, and begin adding dairy loving bacteria to the intestinal tract by drinking the young coconut kefir.

Step 2
Slowly, step by step, begin introducing dairy foods that are low in casein but rich in fats to your child's newly forming inner ecosystem. Our goal is to nourish his/her "gut brain" and his/her central nervous system (the brain in his head and his nerves).

The correct order to introduce the raw milk products are:
1) raw butter,
2) ImmunoPro (suggest putting it into the Vitality SuperGreen),
3) buttermilk and/or whey
4) eventually add whole raw milk that has been fermented into milk kefir
At some point add raw colostrum (see below)

Note:  Since milk protein is a very concentrated food and is also dehydrating by nature it is wise to only drink about 4 ounces of kefir at a time and dilute it with a few ounces of water. Or be sure to drink plenty of water throughout the day.

Step One: Healing the leaky gut.

Before a child can eat any of the diary foods one must heal the leaky gut.
It is critical to rest the gut to heal it. Animals do this. If you have ever seen a dog when he gets sick, you will know he stops eating and also eats grass. (Very alkaline since the body has become too acidic) Body Ecology's Vitality SuperGreen is the only green drink formula on the market that is designed to heal the leaky gut and to continually nourish the gut lining. It is also very alkalizing food yet is so very easy to digest. It's really a wonderful superfood. I hope everyone can find a way to give it to your child. 

When I say to rest the gut and stop eating food, this scares people. Everyone is afraid to have a child stop eating. But they naturally do when they are "sick." Of course, on the BEDROK program, they don't totally go off of all food but we do have them "rest" the digestive tract for 5 - 6 days by feeding them only soft, easy to digest, liquid foods. (Serve them smoothies, broths, "pot liquor," and juices made with young coconut kefir as a base or even young coconut spoon meat puddings that have been fermented.) This will give them plenty of minerals to keep their electrolyte balance. They can even have one meal of softly cooked veggies like a pureed soup, steamed broccoli, carrots, or mashed and baked red skinned potatoes. They can use the raw butter on the potatoes right away if they have been drinking the young coconut kefir for about 4 days.

After this time increase the amount of raw butter and let your child have a much as he wants.  Some children will crave the butter. If your child wants to eat half the tub the first day, this is fine. His body will crave what he needs.

Some children are suspicious of it or don't like its texture. Just keep serving it anyway. Serve it on steamed veggies (any that he will eat like potatoes, carrots or green beans)
and please keep enough on hand to eat it yourself. You child needs to see you eat it and he/she will naturally follow. There's an added bonus for you…raw butter from grass fed cows will make you slender and well toned. Your skin and whole body will start looking younger.  Who doesn't want that? Remember do not cook with this raw butter (use coconut oil for cooking) or heat the butter over 90 degrees. This will destroy its' medicinal value.

The butter you are now eating is from grass fed cows. It is rich in CLA. (conjugated linoleic acid) a great fatty acid. (As an aside: if you also order meats from Peaceful Pastures in Tennessee or from somewhere where the beef is also fed grass, you will also become more lean and fit. One woman lost 82 pounds in just a few months by eating CLA-RICH butter and meat).

It is believed that the raw fat in butter, cream and sour cream and coconut oil will help eliminate toxins and metals like mercury and lead.  The fat acts like a solvent. Much like an oil change for a car, the fats carry the residues out.


More on leaky gut and baby animals and colostrum:

Mark McAfee of Organic Pastures in Fresno told me that dairy farmers know that a baby calf will die if it does not get colostrum. Of all the mammals on this earth only the human baby can survive if it does not get colostrum.

The baby calf…like the human baby…is born with a permeable gut. In the baby calf the gut lining is very, very "leaky" for 24 to 36 hours. Please know that Nature does nothing by mistake...the leaky gut is there by "Divine Intention". If the gut is not permeable, the colostrum’s nutrients that are so essential to the newborn's survival (like transfer factors, lactoferrin (milk iron) and  immunoglobulins) will not get through once his gut lining seals. In veterinarian medicine, it is well accepted that in order to save a baby cow's life, he must get colostrum immediately.

Your child can have raw colostrum from the first six hours. It is available from Organic Pastures.  Since it was from the first milking, it will have no sugar but will have powerful immune boosters. You can do what nature does and give it to your child in the beginning when he has a leaky gut or wait until the diary loving microflora are there to digest it. At this point I do not have enough experience to know how best to advise you on this one. But Sumi gave it to Christopher and Diane to Thomas. Both children continued to progress. I do feel it is extremely valuable to do this at some point especially because you want to give your child a power boost to his immune system.

I have a friend who was raised on a dairy farm. He and his brother drank colostrum all the time. They were both super athletes in high school. They could out run and out play everyone by a long shot. He told me their secret was the colostrum. Today he is still usually healthy even though he left the family dairy farm years ago and it was sold. He does often goes to Brazil where he can get raw butter and dairy. So eats it there.

In Chinese Medicine food has always been seen as a potential medicine. It is said that nothing can be judged as bad or good. Everything has a front and a back…a time when it may be good and a time when it may be bad.  It depends on the person's current, momentary needs and his or her currant condition. Milk foods could be totally inappropriate for a certain condition and a medicine for another condition.

One of the reasons it is worthwhile to create an inner ecosystem where lots of dairy-loving beneficial bacteria and friendly yeast help you enjoy dairy foods is because small children have limited diets. They are basically picky eaters. But they usually love dairy. Many children do not develop a taste for animal protein foods for several more years. Dairy proteins, if they can digest them, become valuable raw proteins. On the body ecology diet you will also be eating proteins from the young coconut meat, and from soaked seeds and nuts or flax seed crackers. There is raw protein in avocado and believe it or not, there is a significant amount of protein in the algae in the Vitality SuperGreen Drink. Even the BED grains are high in protein.

Blood type is a factor to consider. Most of the children who are autistic are blood type A.  I find that A's of all ages do better on the dairy foods that are low in casein. This would be raw butter, buttermilk, and whey. The cheese (curds) are mostly casein so cheese is not really a good food for As Dairy loving bacteria living in the gut allow you to eat and digest dairy. You will be consuming these dairy loving bacteria and yeast in abundance as long as your child drinks about 16 ounces (a pint) of young coconut kefir a day). It is a powerful mineral-rich, probiotic drink.
