You may have found this site because you've heard of young green coconut kefir.  Although, this was an idea of Donna Gates and a few friends (fermenting the young green coconut water of it's sugars to become a beneficial bacterai)  we have to give credit to all the families out there that have made this in their homes, helped their children and passed it on.


One of the most recommended foods at bedrok community is young green coconut kefir (YCK).  Young green coconuts yield several delicious and beneficial foods for our children. 
  
Coconut water (not coconut milk) contains essential minerals and electrolytes from land and sea to adequately hydrate and nourish the body. In fact, during the Pacific and Vietnam young green coconut water was siphoned directly from the nut to give emergency plasma transfusions to wounded soldiers.

  • Coconut Meat a soft, pudding like meat provides an excellent source of lauric and caprylic fatty acids which is known for being antiviral, antibacterial, antifungal, boosting the immune system and killing off intestinal worms.  This meat is high in raw protein, enzyme-rich, easy to digest and contains all the essential amino acids.
  • Coconut oil which is derived from the meat is great for cooking and can be heated to a high temperature for frying. It is truly the healthiest oil you can consume. This oil closely resembles butter in physical and chemical properties without the casein.

Where can I Find Coconuts?
Unfortunately, most U.S. supermarkets do not carry fresh coconuts. However, they are widely available in ethnic grocery stores, such as Asian or Latino markets, farmers’ markets and health food stores. If you are unable to locate a source near you, try requesting them at your local health food store, as many will carry them upon request.  Often, families will go through two cases or more a week, your grocer may supply them with this demand.  If you live in Europe, they are impossible to find.  You can use the boxed coconut water in this case.  The big draw-back is you don’t get the coconut meat.

What do they look like?
They are not brown and hairy like a mature coconut is.  When picked they are green and oval.  Shipped they are shaved down and what you will see is white husk with a flat side wrapped in cellophane.

Can we use the brown hairy coconuts instead?
No, you cannot use the brown coconuts as their mineral content is not the same and also the sulfur holded aminos are not there anymore to suck out the heavy metals out of the cell and detox it. The young baby coconuts have a certain sodium potassium ratio which is able to go into the cell, attach to the mercury and get it out.

How do I know if they are fresh? 
You can’t shake them and determine if they are full of water; like you would a mature coconut.  They are good from 60 days of being picked.  The best sign of a spoiled coconut is a very purplish black bottom and is very easily pushed in.

What do they cost?
They will run anywhere from 99 cents to 3 dollars.  They come nine to a case; often you will get a case discount.  Typically, Asian markets are much cheaper than a health food store.
